Cucumber Cups with Hummus and Veggie Straws

Here’s a fun way to serve veggies and dip for school lunches.

1 large English cucumber
1 cup (250 mL) prepared hummus
2 cups (500 mL) Sensible Portions® Veggie Straws
2 large carrots, cut into sticks

Directions

  1. Trim ends of cucumber. 
  2. Using vegetable peeler, peel off strips of cucumber skin to create stripes. 
  3. Cut cucumber crosswise into 1-inch (2.5 cm) rounds.
  4. Using small melon baller or round-bowled teaspoon, scoop out centre of each cucumber piece to form a hollow divot, leaving base intact. 
  5. Fill divots with hummus, mounding slightly.

Serve with veggie straws and carrot sticks.
