Cinnamon Sugar Veggie Straws with Caramel

Ingredients

1 bag (5 oz/141 g) Sensible Portions Garden Veggie Straws
2 tbsp (30 mL) granulated sugar
1/2 tsp (2 mL) cinnamon
2 apples, cored and sliced into wedges 
 
Caramel:
1/2 cup (125 mL) granulated sugar
1/2 cup (125 mL) whipping cream
1 tbsp (15 mL) butter

Directions

  1. Preheat oven to 325°F (160°C). Toss together Veggie Straws, sugar and cinnamon. Spread on parchment paper–lined baking sheet. Bake for 7 to 8 minutes or until lightly toasted.
  2. Caramel: In saucepan set over medium heat, mix sugar with 2 tbsp (30 mL) water until sugar is dissolved; stop stirring and bring to boil. Boil, brushing down side of saucepan with wet pastry brush, for 3 to 4 minutes or until amber colour.
  3. Carefully add cream and butter; return to boil, stirring to dissolve sugar. Simmer for 3 minutes. Let cool.
  4. Serve Veggie Straws with apple wedges and Caramel.

Tips

Serve with other sliced fruits, such as pears, strawberries or pineapple, if desired.
